Potato-Mushroom Kugel

The baked casserole known as kugel, from Jewish cuisine, can be sweet or savory, and made with noodles or potatoes. This version, with potatoes and matzo meal, is suitable for Passover. 

1/2  pound mushrooms, sliced
3 or 4 ribs of celery, chopped
1 large onion, chopped
1 clove garlic
1/2 stick butter (4 tablespoons)
2 large potatoes, peeled and sliced
4 large eggs
1/2 cup water
1 teaspoon salt, dash of pepper
1/2 cup matzo meal

Saute mushrooms, celery, onion and garlic in butter. Transfer to mixing bowl. Slice and add
potatoes. in small bowl, beat together eggs, water, salt and pepper. Add matzo meal. Combine with vegetables.
Bake in well-greased 8 x 8-inch baking dish at 350 degrees for 50-60 minutes, until puffed and golden.
