The Jewish baked casserole known as kugel can be sweet or savory, made with noodles or potatoes. This version, with potatoes and matzo meal, is suitable for Passover.
½ lb. mushrooms, sliced
3 or 4 ribs of celery, chopped
1 large onion, chopped
1 clove garlic
½ stick butter
2 large potatoes, peeled and sliced
4 large eggs
½ cup water
1 tsp salt, dash of pepper
½ cup matzo meal
Saute mushrooms, celery, onion and garlic in butter. Transfer to mixing bowl. Slice and add
potatoes. Beat together eggs, water, salt and pepper. Add matzo meal. Combine with vegetables.
Bake in well-greased 8 x 8 baking dish at 350 deg for 50-60 minutes, until puffed and golden.
