2 pounds green beans, washed and trimmed
6 tablespoons butter
2 small onions, thinly sliced
1 large clove garlic
½ teaspoon salt
2 tablespoons sesame seeds
8 tablespoons chopped fresh parsley
In a large pot, bring 3 quarts of salted water to a boil. Add beans. Reduce heat and simmer beans until just tender, about 15-20 minutes. Drain and set aside.
Melt butter in a large skillet. Add onions and stir constantly over medium heat for 1 minute. Crush garlic and add to onions. Add beans and toss lightly over medium heat until coated with butter.
Meanwhile, toast sesame seeds in a 350 degree oven for about 5 minutes, being careful not to burn.
Add sesame seeds and parsley to green beans, toss lightly, and serve at once.
