A refreshing apricot flavored cocktail named for the Waldo area of Kansas City, where it was born. Created to highlight Allspice Dram (also known as pimento dram), a West Indian liqueur based on the spice typical to dishes from that region.
- 1 1/2 ounces gin (preferably Hayman’s Old Tom)
- 3/4 ounce apricot liqueur (such as Marie Brizzard Apry)
- 1 teaspoon Allspice Dram (such as St. Elizabeth brand)
- 1/2 ounce lemon juice
Pour all ingredients into an ice-filled cocktail shaker. Shake until well chilled. Drain into a cocktail glass. Garnish with a cherry.
