Cherry-Chipotle Brownies

1 cup (2 sticks) butter, melted
3 cups sugar
1 tablespoon vanilla extract
4 eggs
1 1/2 cups flour
1 cup unsweetened cocoa powder
1 teaspoon ground chipotle pepper
1 teaspoon cinnamon
1 teaspoon salt
1 cup dried cherries (sweet or sour)
1 cup bittersweet chocolate chips

Preheat oven to 350 degrees. Lightly grease an 11-by-8-inch or 10-by10-inch baking dish.

In the bowl of a stand mixer or in a large bowl using an electric mixer, beat together the butter, sugar and vanilla. Beat in eggs, one at a time, until thoroughly combined.

In a separate bowl, mix together flour, cocoa powder, chipotle pepper, cinnamon and salt.

Gently beat dry ingredients into the butter mixture. Mix until evenly combined. With a spatula or wooden spoon, stir in cherries and chocolate chips. Pour batter into the baking dish and level off the top. Bake until set, 35–40 minutes.
