1 cup (2 sticks) butter, melted
3 cups sugar
1 tablespoon vanilla extract
1 1/2 cups flour
1 cup unsweetened cocoa powder
1 teaspoon ground chipotle pepper
1 teaspoon cinnamon
1 teaspoon salt
1 cup dried cherries (sweet or sour)
1 cup bittersweet chocolate chips
Preheat oven to 350 degrees. Lightly grease an 11-by-8-inch or 10-by10-inch baking dish.
In the bowl of a stand mixer or in a large bowl using an electric mixer, beat together the butter, sugar and vanilla. Beat in eggs, one at a time, until thoroughly combined.
In a separate bowl, mix together flour, cocoa powder, chipotle pepper, cinnamon and salt.
Gently beat dry ingredients into the butter mixture. Mix until evenly combined. With a spatula or wooden spoon, stir in cherries and chocolate chips. Pour batter into the baking dish and level off the top. Bake until set, with top beginning to crack, 35–40 minutes.
