We have no idea what makes these cookies Amish. We just know that they are soft, buttery, delicate and delicious.
1 cup sugar
1 cup powdered sugar
1 cup butter, softened
1 cup vegetable oil
1 1/2 teaspoons vanilla
2 eggs
4 cups flour
1 teaspoon cream of tartar
1/2 teaspoon salt
1 teaspoon baking soda
Preheat oven to 325 degrees. Cream sugars with butter. Beat in oil and vanilla (mixture may look curdled). Add eggs, one at a time, beating after each addition. Whisk together dry ingredients. Gradually add dry ingredients to creamed mixture. Chill dough for half an hour.
With an ice cream scoop, measure and drop cookies onto a sheet two inches apart. Bake 8-10 minutes.
