An old-fashioned candy that was always part of the Christmas season, courtesy of a dear family friend.
3 cups sugar
1/2 cup light corn syrup
1/2 cup hot water
3 egg whites, beaten to stiff peaks
1 teaspoon vanilla
1 cup chopped nuts (pecans or walnuts are good; black walnuts make an especially interesting variation, if you can find them)
Combine sugar, syrup and hot water in saucepan. Cook to soft ball stage (238 degrees). Add half of mixtureto the egg whites, beating constantly. Continue cooking syrup until it reaches the hard-ball stage (250 degrees). Add to egg white mixture and continue to beat until cool. Stir in nuts. Drop onto waxed paper.
