Freda’s Divinity

An old-fashioned candy that was always part of the Christmas season, courtesy of a dear family friend. 

3 c. sugar

½ c. light corn syrup

½ c. hot water

3 egg whites, beaten stiff

1 tsp. vanilla

1 c. chopped nuts

Combine sugar, syrup and hot water in saucepan. Cook to soft ball stage (238 degrees). Add half of cooked ingredients to the egg whites, beating constantly. Continue cooking syrup until it reaches the hard ball stage (250 degrees). Add to egg white mixture and continue to beat until cool. Stir in nuts. Drop onto waxed paper.
